What's cooking for lunch?

Your emails have been pouring in asking what I eat for lunch. Well, making a healthy lunch is probably one of the easiest meals you can make. I used to be a sandwich girl, usually a bagel with a cold cut, cheese and greens. Recently I've switched to salads. I was worried that I would be craving my carbs just by having a salad but I was completely wrong. Here is a sample of what I've been having every day for the last month and been fully satisfied.


  • A cucumber
  • A couple of carrots
  • Baked turkey
  • Slices of avocado
  • Feta cheese
  • Pumpkin seeds
  • Olive oil, vinegar and a pinch of salt as dressing

Mix all together, pack in a glass container and chill in the fridge or eat it right away. This salad covers all nutrition groups. Vitamins, protein and good fats. If you are still hungry after this salad then try putting in a little more turkey or other protein.


With this salad I also find that my sugar cravings are better controlled. I no longer feel the need to have desert after lunch.
